A classic Roman dish for Ferragosto: chicken slowly cooked with bell peppers, tomatoes, garlic, and basil. Perfect for a festive summer meal.

Method

  1. Blanch the tomatoes: cut a cross on the top, boil for a few seconds, then peel and roughly chop.
  2. Heat extra virgin olive oil in a large pan.
  3. Add the chicken pieces (drumsticks and thighs) and brown on all sides.
  4. Remove excess fat from the pan.
  5. Add white wine and let it evaporate.
  6. Add 2 cloves of garlic and chili pepper.
  7. Add the chopped tomatoes.
  8. Season with salt during cooking.
  9. Add fresh basil leaves.
  10. Cover partially and let it cook for at least 30 minutes.
  11. Meanwhile, prepare the peppers: remove the white filaments and seeds, and cut into large pieces.
  12. After 30 minutes, add the peppers to the chicken.
  13. Continue cooking for another 30 minutes, uncovered.
  14. Serve the chicken with peppers.
