Chicken with Peppers

A classic Roman dish for Ferragosto: chicken slowly cooked with bell peppers, tomatoes, garlic, and basil. Perfect for a festive summer meal.

Ingredients
9 items- Pollo (Cosce e Sovracosce)Chicken drumsticks and thighs
- Bell PeppersBell peppers
- TomatoesRipe tomatoes for sauce
- Extra Virgin Olive OilExtra virgin olive oil
- White WineDry white wine
- 2 pcsGarlicCloves
- Chili PepperChili pepper (whole or crushed)
- BasilFresh basil leaves
- SaltTo taste
Method
- Blanch the tomatoes: cut a cross on the top, boil for a few seconds, then peel and roughly chop.
- Heat extra virgin olive oil in a large pan.
- Add the chicken pieces (drumsticks and thighs) and brown on all sides.
- Remove excess fat from the pan.
- Add white wine and let it evaporate.
- Add 2 cloves of garlic and chili pepper.
- Add the chopped tomatoes.
- Season with salt during cooking.
- Add fresh basil leaves.
- Cover partially and let it cook for at least 30 minutes.
- Meanwhile, prepare the peppers: remove the white filaments and seeds, and cut into large pieces.
- After 30 minutes, add the peppers to the chicken.
- Continue cooking for another 30 minutes, uncovered.
- Serve the chicken with peppers.
