A classic Roman dish: chicken and bell peppers slow-cooked with onion, white wine, and tomato. Every Roman knows it, every grandmother makes it her own way.

- Season the chicken pieces with salt and pepper.
- Cook the chicken skin-side down in a pan over heat.
- Meanwhile, clean the bell peppers: remove the stem, seeds, and white membranes, then cut and wash them.
- In another pan, heat oil and add sliced white onion. Immediately add the peppers, a pinch of salt and pepper. Sauté for a few minutes; do not fully cook.
- Deglaze the peppers with a good white wine and let the alcohol evaporate.
- Add some peeled tomatoes to the peppers and mix.
- Transfer the pepper mixture to the pan with the chicken.
- Cover and cook on low heat for about 40-50 minutes until the chicken is tender.
- Serve hot.
