Roast Chicken with Onions and Wine

A classic Italian dish where chicken pieces are browned with garlic, then baked with onions, rosemary, and white wine until tender and juicy. The skin becomes wonderfully crispy, and the onions melt into a savory-sweet sauce. Perfect for a comforting family meal.

- Heat a little olive oil in a cast-iron casserole over medium heat.
- Add 2 garlic cloves, whole and lightly crushed.
- Place chicken pieces (preferably thighs and drumsticks of similar size) skin side down in the casserole. Season the underside with salt and pepper.
- Brown the chicken well on the skin side, then turn them over.
- Add onions, placing them between the chicken pieces. Add fresh rosemary.
- Pour in white wine and season with salt and pepper on top.
- Wait until the alcohol has evaporated (you can feel it by moving your hand above the pot).
- Transfer the casserole to a preheated static oven at 200°C (400°F) and cook for about 1 hour.
- If there is too much liquid after roasting, let it reduce on the stovetop for a few minutes.
- Serve the chicken with the caramelised onions and its juices.
