Chicken Parmigiana is a classic Italian-American dish, rich and flavorful. Breaded and fried chicken cutlets are layered with tomato sauce, mozzarella, and Parmesan, then baked until bubbly.

Method
- Make the tomato sauce: sauté a garlic clove in a little oil, add tomato passata, a pinch of salt, a few basil leaves, and a pinch of oregano. Let it simmer briefly.
- Prepare the chicken: take slices of chicken breast and coat them in flour.
- Prepare the breading: mix breadcrumbs with garlic powder, grated Parmesan, grated Pecorino, and dried parsley.
- Beat the eggs. Dip the floured chicken in the egg, then coat with the seasoned breadcrumbs.
- Fry the breaded chicken slices in hot oil until golden. Do not overcook, as they will go into the oven.
- Prepare the baking dish: spread the tomato sauce (remove the garlic clove but leave the basil) on the bottom.
- Place the fried chicken slices on the sauce.
- Top each chicken slice with slices of mozzarella (preferably pizza mozzarella as it releases less liquid).
- Sprinkle generously with grated Parmesan.
- Bake in a preheated oven at 200°C (400°F) for 5 minutes, then switch to grill for another 5 minutes to form a crispy crust.
- Serve with fresh basil leaves.
