A quick stir-fry of chicken and vegetables with ginger, soy sauce, honey, and sesame seeds, inspired by Asian flavors. Perfect for impressing guests with a homemade 'travel-inspired' dish.

- Carrot
- Gingerfresh, grated
- Spring Onionspring onion, white and green parts separated
- Sesame Seeds
- Honeyto caramelise
- Chicken Thighsboneless chicken thighs, cut into pieces
- Garlicfresh, grated
- Soy Sauceabout 2–3 tablespoons
- Extra Virgin Olive Oilfor cooking; can mix with sesame oil
- Chili Pepper(optional) — fresh red chili, to taste
Method
- Cut the zucchini in half lengthwise, then slice crosswise into small pieces. Do the same with the carrot.
- Heat a mix of olive oil and sesame oil (or just olive oil) in a pan over high heat. Add the vegetables and stir-fry.
- Add the white part of the spring onion and the chili pepper (if using). Continue stir-frying.
- Transfer the vegetables to a plate and set aside.
- In the same or a separate clean pan, heat olive oil over high heat. Add the chicken thigh pieces and sear until golden.
- Grate fresh ginger directly into the pan with the chicken and toss.
- Towards the end of cooking, grate fresh garlic into the pan (so it doesn't burn).
- Add honey to caramelise the chicken.
- Pour in soy sauce (2–3 tablespoons) and toss everything together.
- Add sesame seeds and cook for another 30 seconds until the sauce reduces slightly.
- Return the vegetables to the pan and toss everything together over high heat for a minute.
- Serve the chicken and vegetables topped with extra sesame seeds and the green part of the spring onion. Accompany with steamed basmati rice if desired.
