Classic Roman-style hunter chicken, marinated overnight in herbs and white wine, then slow-cooked with olives and anchovies for a rich, savory sauce.

Ingredients

- Extra Virgin Olive Oilas needed
- Olivesto taste
- Saltto taste
- Pepperto taste
- Chili Pepper(optional) — optional
- 1/2Dry White Winehalf a glass
- White Vinegarto deglaze
- 3 pcsAnchovies3 fillets
Method
- Marinate the chicken: chop the herbs (sage, rosemary, thyme, mint). Place the chicken skin-side down, add the herbs, a pinch of salt, and massage. Add white wine. Cover with plastic wrap and marinate in the refrigerator for 8-10 hours.
- Remove the chicken from the fridge and let it sit at room temperature for about 1 hour.
- In a wide pan, heat oil with anchovy fillets. Add the chicken skin-side down and sear over high heat until a crust forms.
- Turn the chicken and sear the other side for a few minutes.
- Deglaze with white wine vinegar and the marinade juices. Scrape the bottom to release the fond.
- Lower the heat, add olives, and cover with the lid slightly open. Cook for 40-50 minutes.
- Serve with the pan sauce.
