A classic Italian hunter-style chicken stew, slowly cooked with garlic, chili, white wine, rosemary, sage, and finished with chicken livers and olives. A hearty and flavorful dish perfect for Sunday lunch.

Ingredients

- 1 pcsGarlic1 clove
- Chili Pepperto taste
- 700 gFree-Range Chickenhalf free-range chicken, about 700g
- 150 mlWhite Wine1 glass of dry white wine
- 1 pcsFresh Rosemarya small sprig
- 1 pcsFresh Sagea small sprig
- Saltto taste
- Pepperto taste
- Chicken Liverchicken livers (optional hearts)
- Pitted Olivesa generous handful
Method
- Heat olive oil in a large pan over high heat. Add a garlic clove cut into small chunks and a piece of chili pepper.
- Add the chicken pieces and brown them well on all sides over high heat.
- Deglaze with white wine and let it evaporate.
- Add fresh rosemary and sage, salt and pepper.
- Add a little water, reduce the heat, cover and cook for 20 minutes.
- After 20 minutes, add the chicken livers and pitted olives. Cover and continue cooking for another 20 minutes.
- The sauce should be thick and the chicken tender. Serve with bread for dipping.
