Ingredients
8 items- Sovracosci di PolloChicken thighs, skin removed if desired
- Olive OilExtra virgin olive oil for cooking
- Garlic2–3 cloves, crushed or sliced
- RosemaryFresh rosemary sprigs
- Chili Pepper(optional) — Dried chili pepper, to taste
- White Wine VinegarFor deglazing
- BeerA splash of beer (e.g., light lager)
- OlivesMix of oil-cured olives and olives with pit
Method
- Cut the chicken thighs into pieces (small or large, as preferred). Optionally remove the skin.
- Heat a pan with olive oil and add garlic and rosemary.
- Add the chicken pieces to the pan and brown them well on all sides until golden.
- Add chili pepper (optional) and deglaze with a splash of white wine vinegar.
- Pour in some beer and let it sizzle.
- Add olives (both oil-cured and pitted olives) and stir.
- Cover the pan and cook over medium-low heat for about 10 minutes.
- Uncover, raise the heat slightly, and let the liquid reduce until the chicken is nicely glazed and slightly crispy on the edges.
