Lemon Sweet and Sour Chicken

Crispy fried chicken thighs in a sweet and sour lemon sauce, coated with a crunchy breading of corn flakes and breadcrumbs, then tossed in a ginger, honey, and chili glaze.

Method

  1. Debone the chicken thighs and cut them into bite-sized pieces, about 2 cm each.
  2. In a bowl, mix 100g of flour, 110ml of water, and a pinch of smoked paprika to make a batter.
  3. Add the chicken pieces to the batter and let them marinate for 2-3 minutes.
  4. Crush the corn flakes and mix them with the breadcrumbs in a shallow dish.
  5. Coat each piece of chicken in the corn flake and breadcrumb mixture, pressing gently to adhere.
  6. Heat 500ml of seed oil in a deep pan to 170°C (340°F) and fry the chicken in batches until golden and crispy, about 4-5 minutes per batch. Drain on paper towels.
  7. In a separate pan, heat a drizzle of extra virgin olive oil and sauté 1 clove of garlic (sliced), red and green chili (to taste), and a small piece of fresh ginger (grated) until fragrant.
  8. Add honey (about 2 tablespoons) and the juice of 1 lemon. Add a splash of water to prevent burning and let the sauce thicken for 2 minutes.
  9. Add the fried chicken pieces to the sauce and toss well to coat. Remove from heat immediately to maintain crispiness.
  10. Serve immediately, sprinkled with sesame seeds.
