- Aroma di Vanigliavanilla extract or bean
- Seed Oilvegetable oil
- Yogurtplain or apricot flavor; use about 125-150 g
- 1 pcsBaking Powder1 sachet (about 16 g) baking powder
- Flourall-purpose flour
- Potato Starchpotato starch
- Butter(optional) — for greasing the mold
Method
- In a tall bowl, place the eggs, sugar, a pinch of salt, lemon zest, and vanilla extract. Beat with an electric mixer until pale and fluffy (white foam).
- Slowly drizzle in the vegetable oil while mixing.
- Add the yogurt in two additions, mixing well after each.
- Add the baking powder and mix.
- Gradually add the sifted flour and potato starch, mixing until smooth.
- Butter a plumcake mold and pour in the batter.
- Bake in a preheated oven at 180°C (350°F) for 30-35 minutes. Do the toothpick test before removing from the oven.
- Let cool slightly before unmolding.
