A savory plumcake made with ham, cheese, and a light batter. Perfect for aperitivo, Easter breakfast, or a tasty snack.

Ingredients

- Salta pinch
- 250 gFlour
- 100 gGrated Parmigiano Reggianograted
- 100 gCaciottina dolcediced
- 100 gSalumi misti (ciauscolo e prosciutto crudo)cut into small pieces; mix of ciauscolo and prosciutto crudo
- Milk1 glass (about 200 ml)
- Seed Oil1 glass (about 200 ml)
- 7 gDried Brewer's Yeast1 packet
- Butterfor greasing the pan
- Sunflower Seeds(optional) — for topping
- Sesame Seeds(optional) — for topping
Method
- Beat the eggs with a pinch of salt until doubled in volume.
- Meanwhile, dissolve the dry yeast in cold milk, stir well, and let rest for about 1 minute.
- Add the milk with yeast and the vegetable oil to the beaten eggs.
- Add the flour and mix well.
- Add the grated Parmigiano Reggiano, diced sweet caciotta cheese, and mixed cured meats (ciauscolo and prosciutto crudo cut into small pieces). Mix until combined.
- Butter a plumcake loaf pan and pour in the batter.
- Sprinkle the surface with sunflower seeds and sesame seeds.
- Bake in a preheated oven at 180°C (fan-assisted at minimum fan, or static) for 40 minutes.
- Remove from the oven and let it cool on a wire rack (not on a solid surface) for 10 minutes.
- Unmold and serve warm.
