Crispy potato bases topped with tomato sauce and mozzarella, baked until golden. A quick and savory snack that looks just like mini pizzas.

Method

  1. Boil potatoes until tender (with or without skin; use the method shown to easily remove skin after boiling).
  2. Mash the hot potatoes with a potato masher.
  3. While still warm, mix in grated Parmesan cheese and two knobs of butter. Mix well until combined.
  4. Place the mixture on a sheet of parchment paper, flatten to about 1 cm thickness, then cover with another sheet of parchment paper. You can use a rolling pin or your hands to flatten.
  5. Let cool, then transfer to the freezer until completely frozen.
  6. Remove from freezer. Use a round cutter (about 8–9 cm) to cut out circles. Reshape scraps to make more circles.
  7. Place the circles on a baking sheet lined with parchment paper lightly brushed with oil.
  8. Using a spoon, press slightly in the center of each circle to create a small rim, like a pizza crust.
  9. Prepare tomato sauce: blend peeled tomatoes, add a little oil, a pinch of salt, chopped basil, and a pinch of oregano. Mix well.
  10. Spoon the tomato sauce onto each potato base.
  11. Bake in a static oven preheated to 200–210°C for about 20 minutes.
  12. Remove from oven, top with pieces of mozzarella. Optionally sprinkle a little grated Parmesan.
  13. Return to oven at 200°C for about 5 minutes, until the mozzarella is melted and bubbly.
  14. Serve hot.
