Potato Pizza Bites

Crispy potato bases topped with tomato sauce and mozzarella, baked until golden. A quick and savory snack that looks just like mini pizzas.

Ingredients
10 items- PotatoesBoiled until tender
- Parmigiano ReggianoGrated, to taste
- 2 knobsButterAbout 2 knobs
- Peeled TomatoesBlended into sauce
- Olive OilA drizzle, for the sauce and for the baking sheet
- SaltA good pinch
- BasilChopped, to taste
- OreganoA good pinch
- MozzarellaCut into pieces, to taste
- Parmigiano Reggiano (extra)(optional) — Optional, grated for topping
Method
- Boil potatoes until tender (with or without skin; use the method shown to easily remove skin after boiling).
- Mash the hot potatoes with a potato masher.
- While still warm, mix in grated Parmesan cheese and two knobs of butter. Mix well until combined.
- Place the mixture on a sheet of parchment paper, flatten to about 1 cm thickness, then cover with another sheet of parchment paper. You can use a rolling pin or your hands to flatten.
- Let cool, then transfer to the freezer until completely frozen.
- Remove from freezer. Use a round cutter (about 8–9 cm) to cut out circles. Reshape scraps to make more circles.
- Place the circles on a baking sheet lined with parchment paper lightly brushed with oil.
- Using a spoon, press slightly in the center of each circle to create a small rim, like a pizza crust.
- Prepare tomato sauce: blend peeled tomatoes, add a little oil, a pinch of salt, chopped basil, and a pinch of oregano. Mix well.
- Spoon the tomato sauce onto each potato base.
- Bake in a static oven preheated to 200–210°C for about 20 minutes.
- Remove from oven, top with pieces of mozzarella. Optionally sprinkle a little grated Parmesan.
- Return to oven at 200°C for about 5 minutes, until the mozzarella is melted and bubbly.
- Serve hot.
