A traditional Abruzzese rustic bread without yeast, also known as 'stupid pizza'. Simple to make with just flour, white wine, olive oil and salt, baked until golden and crispy. Traditionally broken by hand and served with prosciutto.

Method

  1. In a bowl, mix flour with white wine, olive oil, and a pinch of salt.
  2. Knead the mixture until a smooth dough forms.
  3. Roll out the dough to a thickness of about 1.5 cm.
  4. Make shallow incisions on the surface of the dough (these will help break the bread later).
  5. Brush the top with olive oil and sprinkle with salt.
  6. Place the dough on the lowest rack of a preheated oven at 220°C (430°F). Bake for 5–10 minutes, then move to the middle rack and reduce temperature to 200°C (400°F). Continue baking for at least 25 minutes.
  7. Optionally, use the grill function for the last minute or two to achieve a deeper golden color.
  8. Remove from the oven and let cool slightly. Do not cut with a knife; break by hand along the incisions. Serve warm, optionally with prosciutto.
