Classic Roman-style Four Seasons Pizza with a light tomato sauce, fior di latte mozzarella, mushrooms, cooked ham, olives, and artichokes added after baking for a fresh flavor.

Ingredients
12 items- 800 gFlour
- 200 gWhole Farro
- 650 gWater
- 4 gDry Brewer's Yeast
- 20 gSalt
- 500 gPeeled TomatoesSpread lightly on the dough
- 1000 gFior di Latte
- 250 gChampignon Mushrooms
- 300 gCooked HamCooked ham
- 250 gOlives
- Carciofini Sott'OlioAdded after baking
- Olive OilTo drizzle
Method
- Mix 800g tipo 0 flour, 200g whole spelt flour, and 4g dry yeast in a mixer.
- Add 650g water and 20g salt. Mix until combined.
- Remove dough and form into a single mass quickly.
- Divide into balls of 160-170g. Use the technique: pull dough to center, rotate, seal, then round on the table and place in a box.
- Cover and let rise until doubled, at least 2 hours.
- Take a risen ball and roll it out with a rolling pin in the classic Roman pizza method.
- Place the disc on the table and spread a thin layer of tomato sauce (just a lick) to keep the base crispy.
- Add fior di latte mozzarella.
- Divide the toppings into four sections: one section mushrooms, one section cooked ham, one section olives. Leave the fourth section empty for now.
- Drizzle with olive oil.
- Bake at 330°C (626°F) slowly until crispy.
- After baking, add artichokes (carciofi sott'olio) to the fourth section and serve.
