Picanha on Skewer (Brazilian Style)

A classic Brazilian churrascaria style recipe: large chunks of picanha (top sirloin cap) skewered on a long sword and grilled over a wood fire. Served with pico de gallo, fried plantains, and grilled corn.

- Fine SaltFine salt
- 2 pcsSpring Onion(optional) — Spring onion
- 3 pcsLime(optional) — Lime
- Chili Pepper(optional) — Fresh chili pepper
- Datterini Tomatoes(optional) — Cherry tomatoes
- Coriandolo Fresco(optional) — Fresh cilantro
- Extra Virgin Olive Oil(optional) — Extra virgin olive oil
- 1 pcsPlatanoRipe plantain
- Seed OilVegetable oil for frying
- Bread(optional) — Bread, preferably Pane di Nettuno
- Caciotta d'Urbino(optional) — Sheep milk cheese from Urbino
- Corn(optional) — Corn on the cob
Method
- Remove the picanha from the refrigerator at least two hours before cooking.
- Cut the meat into pieces about three fingers thick.
- Roll each piece so that the fat cap remains on the outside, then skewer tightly onto the sword.
- Season only the lean part of the meat with fine salt (not on the fat).
- Let rest for 20 minutes.
- Prepare the pico de gallo: finely chop the spring onion, squeeze the lime, add thinly sliced chili, diced cherry tomatoes, chopped fresh cilantro, extra virgin olive oil, and salt. Mix.
- Peel the plantain and slice it thinly; fry in hot oil (170-180°C) until golden; drain and salt.
- Prepare the wood fire grill; place the skewered meat about 30 cm above the coals.
- Turn the meat occasionally until desired doneness (a crust forms).
- (Optional) Toast slices of bread with slices of Caciotta d'Urbino cheese on the grill until the cheese melts.
- When the meat is cooked, slice it directly from the skewer (vertical cut).
- Serve with pico de gallo, fried plantains, and grilled corn.
