- 1 tbspSaltfor marinade; also a pinch after rinsing
- 1 tspCane Sugar
- Juniper Berriesto taste
- Pink Pepperto taste
- Rosemaryto taste
- Gingerfresh, to taste
- Extra Virgin Olive Oilfor the fish and for the green sauce
- Parsleyfor the green sauce
- Celery Leavesfor the green sauce
- Breadsticksor breadcrumbs; for the green sauce
- Aliceanchovy; for the green sauce
- Mostardamustard; for the green sauce
- Colatura di Alicianchovy sauce; for the green sauce
- Vinegarsplash; for the green sauce
- Mirtofresh leaves for smoking
- Cachille Marittima(optional) — sea rocket; fresh herb for serving
Method
- Slice the swordfish into steaks about 3 cm thick, removing the bloodline and sinew.
- Prepare the marinade: mix one tablespoon of salt, one teaspoon of brown sugar, juniper berries, pink pepper, rosemary, and fresh ginger.
- Marinate the fish for 10 minutes.
- Rinse the fish and pat dry.
- Season with a pinch of salt and extra virgin olive oil, massage gently.
- Preheat the barbecue with charcoal to about 250°C.
- Cook the fish on the hot grill, close the lid to create steam.
- After a few minutes, when the fish looks shiny, flip it.
- Add fresh myrtle for smoking, close and let it smoke briefly.
- Prepare the green sauce: blend parsley, celery leaves, breadsticks, anchovy, mustard, extra virgin olive oil, anchovy sauce, and a splash of vinegar.
- Serve the swordfish with the green sauce, fresh herbs like sea rocket, and pink pepper.
