John Dory in Crazy Water

Ingredients
15 items- 1 pcsPesce San Pietroor other white fish
- 1 pcsGarlic1 clove
- Extra Virgin Olive Oilgenerous amount
- Parsleyfresh, a few sprigs
- Potatoespeeled and quartered
- Cherry Tomatoesmixed red and yellow, halved
- Spring Onionfresh, sliced
- Taggiasca Olivespitted
- Oreganodried
- Lemon Zestgrated zest
- White Winea splash
- Waterenough to reach halfway up the fish
- Saltto taste
- Pepperto taste
- Chili Pepper(optional) — optional, whole or chopped
Method
- Take a clove of garlic and crush it.
- In a pan, add a generous amount of olive oil and place the crushed garlic.
- Let the garlic brown slightly over medium heat.
- Meanwhile, clean the John Dory (San Pietro): remove the fins with scissors, make incisions on both sides, and season the inside with salt, garlic, and parsley.
- Place the fish in the pan with the garlic.
- Add quartered potatoes around the fish.
- Add halved cherry tomatoes (mix of red and yellow).
- Add sliced scallion (spring onion).
- Add pitted Taggiasca olives.
- Add dried oregano.
- Add a little lemon zest.
- Increase heat and add a splash of white wine. Let the alcohol evaporate.
- Season with salt and pepper; add a chili pepper if desired.
- Add water until it reaches halfway up the fish.
- Cook for exactly 10 minutes.
- Check doneness: the flesh should easily separate from the bone.
- Serve the fish with the vegetables and juices, garnish with fresh parsley.
