A simple and quick recipe for perch fillet cooked in butter and garlic lemon sauce, finished with parsley and lemon zest.

Ingredients
13 items- Persico (Filetto)Fresh perch fillet, about 1 fillet for 4 pieces
- SaltTo taste
- Garlic PowderA little
- PepperTo taste
- 1 pcsLemonJuiced and zested
- CornstarchA little, to thicken the sauce
- 1 pcsGarlic1 clove, peeled and pressed
- ButterA nice piece, for cooking and sauce
- Olive OilA little, for frying
- FlourFor coating the fish
- ParsleyChopped, for garnish
- Lemon PeelGrated zest from the same lemon
- Fiocchi di Peperoncino(optional) — Optional, for heat
Method
- Season the perch fillet with salt, garlic powder, and pepper.
- Cut the fillet into 4 pieces.
- Let marinate briefly.
- Prepare the sauce: squeeze a lemon, add a little cornstarch, and one peeled and pressed garlic clove.
- In a pan, melt a nice piece of butter over low heat.
- Flour the fish pieces.
- Add a little oil to the pan with the butter.
- Add the lemon-garlic sauce to the melted butter and stir. The sauce is ready.
- Cook the floured fish pieces in the pan with butter and oil, without turning too often; tilt the pan and baste the fish with the fat.
- When the fish is cooked, remove it from the pan and let it dry for a moment.
- Serve with the sauce on top, some chopped parsley, and some grated lemon zest. Optionally add chili flakes.
