Sweet and Sour Peppers

A classic Italian recipe for sweet and sour peppers, cooked slowly with garlic, sugar, and apple cider vinegar. Perfect as a side dish or appetizer.

7 items- Bell PeppersUse a mix of red, yellow, and green
- Olive OilA good drizzle
- 2 pcsGarlicleave in their skins
- Salta pinch, then adjust to taste
- Sugarwhite or brown sugar
- Apple Cider Vinegarapple cider vinegar
- Fresh Basil(optional) — add at the end
Method
- Clean the peppers by removing the stem, seeds, and white pith.
- Slice the peppers into pieces of your desired size.
- Heat a good drizzle of olive oil in a casserole or pan. Add 2 garlic cloves in their skins. When the oil starts to bubble, add the peppers.
- Add a pinch of salt.
- Cook over medium-low heat, stirring occasionally, for about 20 minutes until the peppers are very soft.
- Taste and adjust salt if necessary.
- Add sugar (white or brown) and let it melt and almost caramelize.
- Lower the heat to minimum and add apple cider vinegar.
- Cook for 5 minutes if you like them with some bite, or 10-15 minutes for very soft peppers.
- Optionally, add fresh basil at the end.
- Serve the peppers with their cooking juices. They are even better after resting for a while.
