Peppers with Breadcrumbs

Peperoni ammuddicati are a very simple and tasty Sicilian side dish, perfect for accompanying your main courses. Peppers are sautéed, then baked with breadcrumbs, capers, oregano, and parmesan until crispy.

Method

  1. Clean the peppers, remove the inner white parts and seeds, and cut them into strips about the size shown.
  2. Place a pot or baking dish (oven-safe) with a drizzle of olive oil and a clove of garlic. Heat until fragrant.
  3. Add the pepper strips and sauté over high heat until they are slightly charred on the edges.
  4. Reduce the heat to low, add a splash of water, cover, and cook for about 10-15 minutes until the peppers are tender.
  5. Remove the garlic clove.
  6. Add breadcrumbs, capers, oregano, and grated parmesan cheese. Stir well to combine.
  7. Transfer to the oven and grill (broil) for about 10 minutes until the top is golden and crispy.
  8. Serve warm.
