Peperoni ammuddicati are a very simple and tasty Sicilian side dish, perfect for accompanying your main courses. Peppers are sautéed, then baked with breadcrumbs, capers, oregano, and parmesan until crispy.

- Clean the peppers, remove the inner white parts and seeds, and cut them into strips about the size shown.
- Place a pot or baking dish (oven-safe) with a drizzle of olive oil and a clove of garlic. Heat until fragrant.
- Add the pepper strips and sauté over high heat until they are slightly charred on the edges.
- Reduce the heat to low, add a splash of water, cover, and cook for about 10-15 minutes until the peppers are tender.
- Remove the garlic clove.
- Add breadcrumbs, capers, oregano, and grated parmesan cheese. Stir well to combine.
- Transfer to the oven and grill (broil) for about 10 minutes until the top is golden and crispy.
- Serve warm.
