Green Peppers in Tomato Sauce

A simple Italian recipe for green peppers fried and then simmered in a rich tomato sauce with garlic and basil. Serve warm or cold as a side dish or appetizer.

- Rinse the green peppers thoroughly.
- Clean the peppers: for small ones, remove only the stem; for larger ones, cut off the entire top and remove the seeds.
- In a pan, pour seed oil and bring it to a boil.
- Fry the peppers in the boiling oil, cover them, and stir occasionally over medium heat. Cook until soft.
- Remove the peppers and place them on paper towels to drain.
- Discard the seed oil. In the same pan, make a soffritto with extra virgin olive oil and garlic.
- Add a jar of cherry tomatoes and cook for a few minutes.
- Add the fried peppers and let them absorb the flavors.
- Crush some cherry tomatoes to release the sauce and let everything bind together.
- Season with salt.
- Add chopped basil (feel free to be generous) and let it infuse for another minute.
- Once everything is well combined and creamy, the dish is ready. Serve hot or cold.
