A classic Italian pasta dish from the 1980s: creamy pink sauce with smoked salmon and cognac.

Ingredients

- 1 pcsOnion
- Smoked SalmonUse quality smoked salmon with natural salting and drying
- Cognac
- Peeled Tomatoes
- Cooking Cream
- Penne LisceChoose a porous, white pasta (smooth penne recommended)
- SaltBe cautious with salt as the salmon is already salty
Method
- Melt the butter in a pan over low heat.
- Finely chop the onion and add it to the melting butter until fragrant.
- Add the smoked salmon to the pan and sauté gently.
- Deglaze with cognac and let the alcohol evaporate.
- Add the tomato from a jar along with a little pasta cooking water; stir to combine.
- Add the heavy cream and mix well.
- Season sparingly with salt, because the salmon is already salty.
- Cook the penne pasta until 2–3 minutes before al dente, then drain and add to the sauce to finish cooking.
- Serve with a spoon or fork.
