Tuna and Pea Pasta

A classic Italian pasta dish with tuna and peas, quick and simple to make. The chef shows how to combine garlic, chili, tomato, peas, and drained tuna for a flavorful sauce, served with fresh parsley and chili.

Method

  1. In a pan, heat a little olive oil over medium heat and add garlic (sliced if you like intense flavor, whole if you prefer mild) and one or more fresh chili peppers.
  2. Cook gently, being careful not to burn the garlic.
  3. Add crushed or blended peeled tomatoes (or passata) and let the sauce cook for 3–4 minutes.
  4. Meanwhile, finely chop some fresh parsley and set aside.
  5. Bring a large pot of salted water to a boil and cook the pasta (mezze maniche or any short/ long pasta) until al dente, removing it 2–3 minutes before the indicated cooking time.
  6. To the simmering sauce, add a generous amount of frozen or fresh peas and the drained canned tuna (preferably tuna in oil, drained). Stir and heat through.
  7. If the sauce becomes too thick, add a splash of pasta cooking water.
  8. Drain the pasta (reserving some water if needed) and toss it with the sauce.
  9. Serve immediately, garnishing with chopped parsley and a little fresh chili pepper to taste.
