Pasta with speck and mushrooms is a rustic and flavorful first course, perfect for those who love smoky notes in their food. It is a great classic because it is very simple to make and everyone loves it.

Ingredients
10 items- Mixed MushroomsMix of mushrooms, e.g., champignons, pioppini
- SpeckSliced speck (smoked cured ham)
- Garlic1 clove
- ThymeFresh thyme sprig
- Olive OilExtra virgin olive oil
- Salt
- Pasta (Mezze Penne)Any short pasta can be used
- Milk(optional) — Can substitute with water for a dairy-free version
- ParsleyFresh parsley, finely chopped
- Black PepperFreshly ground black pepper, to taste
Method
- Heat olive oil in a pan with a clove of garlic and a sprig of thyme.
- Add the mixed mushrooms and stew on low heat for at least 10 minutes, without adding salt yet.
- Meanwhile, in another pan, heat the sliced speck until it becomes slightly translucent (do not add extra fat).
- Once the mushrooms are cooked, season with salt.
- Cook the pasta (mezze penne) in boiling salted water.
- Remove the garlic and thyme from the mushrooms. Take a portion of the cooked mushrooms and blend them with a little milk (or water) to create a creamy sauce.
- A couple of minutes before the pasta is done, finely chop some fresh parsley.
- Drain the pasta (reserving some pasta water) and add it directly to the pan with the mushrooms.
- Add the blended mushroom sauce and a splash of pasta water; mix well to combine. If the sauce seems dry, add more pasta water.
- Add most of the speck (reserve some for topping) and mix.
- Add the chopped parsley and freshly ground black pepper. Toss everything together.
- Serve the pasta with the remaining speck scattered on top.
