Pasta with Sausage and Peppers

A first course with an incredible flavor, strong taste, unmistakable aroma, and a rustic, appetizing appearance. The combination of sausage and peppers is not the lightest, but it's indescribably delicious. The saltiness of the pork contrasts beautifully with the sweetness of onions and peppers, creating a fabulous mix. Also visually appealing thanks to the vivid colors of the vegetables, it's the perfect dish to bring to the table.

Ingredients

- Olive Oil
- Onion
- Bell Peppers
- Basila few leaves
- Blended Peeled Tomato
- Waterfor cooking and deglazing
- Salt
- Pasta (Tortiglioni o corta)short pasta like tortiglioni
- Parmigiano Reggiano(optional) — grated, to taste
- Black Pepper(optional) — to taste
- Chili Pepper(optional) — optional, to taste
Method
- Brown the sausage with a little oil in a pan.
- Meanwhile, prepare the peppers: remove the white inner part and cut them into strips.
- Remove the browned sausage and set it aside.
- In the same pan, add the onions and a splash of boiling water to deglaze the pan.
- Add the peppers and let them brown for about 45 minutes.
- Season with salt and add a few basil leaves.
- Add the blended peeled tomatoes and a little water. Cover and cook for about half an hour, stirring occasionally.
- After about 20 minutes, put the pasta water to boil and salt it.
- Add the sausage back to the sauce and keep the heat very low.
- Cook the pasta al dente and drain it.
- Toss the pasta with the sauce, adding a little pasta water if needed.
- Serve with grated Parmesan and black pepper to taste.
