Ingredients

- Extra Virgin Olive Oilextra virgin olive oil
- 1 pcsGarlic1 clove

- Celerycelery, including heart
- Pepperfreshly ground black pepper
- Pasta Rigatonifor 2 servings
- 200 gFresh Bonitofresh tuna
- 3 pcsPomodori Verdigreen tomatoes
- Olive Denocciolate SottolioTaggiasche olives in oil, pitted
- Fresh Parsley(optional) — chopped, for garnishing

Method
- Finely chop the fresh spring onion.
- Heat olive oil in a pan and add a clove of garlic. Fry slowly.
- Add the parsley stems and let them brown.
- Remove the garlic and add the chopped spring onion off the heat to avoid burning.
- Add the chopped celery and fresh pepper.
- Meanwhile, cook the rigatoni pasta al dente.
- Cut the green tomatoes into small pieces.
- Squeeze the pitted Taggiasche olives to remove excess oil.
- When the pasta is ready, add it to the pan with the sauce.
- Add the fresh tuna at the last moment to keep it moist.
- Add the green tomatoes and olives.
- Season with salt and mix gently.
- Finish with chopped fresh parsley if desired.
