Pasta Pizza (Pastizza)

A creative pasta dish that tastes and looks like a Roman-style pizza. Paccheri pasta is cooked in a marinara sauce with garlic, basil, and chili, then baked with mozzarella and Parmesan until bubbly and golden.

Ingredients
11 items- PaccheriUse large paccheri pasta (smooth outside, ridged inside as preferred)
- Extra Virgin Olive OilGenerous amount for the sauce and baking
- GarlicSliced; can be removed after browning if desired
- Chili Pepper(optional) — Optional, can be omitted for children
- Fresh BasilA few leaves added early to the sauce
- Tomato PassataRustic crushed tomatoes with pieces
- MozzarellaFresh mozzarella, drained and hand-torn
- Parmigiano ReggianoGrated; also used for topping before baking
- Dried OreganoDried oregano, sprinkled before baking
- Black PepperA small pinch added to the cooked sauce
- SaltFor pasta water and to taste
Method
- Bring a pot of salted water to a boil and add the paccheri pasta.
- Meanwhile, in a pan, add abundant olive oil, sliced garlic, and chili pepper (if using). Sauté gently until the garlic is golden, then remove the garlic pieces (or leave them if preferred).
- Add fresh basil leaves and let them sizzle briefly.
- Pour in a rustic passata (crushed tomatoes) and let the sauce cook while the pasta finishes.
- Drain the pasta al dente (reserve a little pasta water if needed) and transfer it to the sauce. Toss to coat.
- Grate Parmesan cheese over the pasta and mix well.
- Preheat the oven to grill (broiler) setting.
- Arrange the sauced paccheri in a single layer in an oven-safe dish or tray.
- Hand-tear the mozzarella and scatter it over the pasta, then sprinkle oregano and more Parmesan on top.
- Place the dish in the oven under the grill for 2–5 minutes, until the cheese melts and bubbles and the edges get crispy.
- Serve immediately, watching out for hot cheese pulls.
