A rich Roman pasta dish with potatoes, smoky provola cheese, guanciale, and a touch of lemon zest.

Ingredients
14 items- Celery
- Carrot
- Onion
- Extra Virgin Olive Oil
- GuancialeFinely chopped
- PotatoesCut into cubes and soaked in water
- Vegetable Broth
- Pasta Mista (Lumachine, Ziti, Fettuccine, Spaghetti)Broken pasta pieces
- SaltA couple of handfuls
- 2 tspTomato Paste
- Chili PepperA pinch
- Pepe Nero TostatoTo taste
- Smoked ProvolaCut into strips, added off-heat
- Lemon PeelGrated zest of an unwaxed lemon
Method
- Place celery, carrot, onion, extra virgin olive oil, and finely chopped guanciale in the bottom of a pot.
- Add the potatoes, cut into cubes and previously soaked in water.
- Add vegetable broth.
- Prepare mixed pasta by breaking ziti, fettuccine, spaghetti into pieces; also use small pasta like lumachine.
- When the potatoes begin to break down, add the mixed pasta.
- Add more broth and continue cooking.
- Season with a couple of handfuls of salt, two teaspoons of tomato concentrate, and a pinch of chili pepper.
- Cook for about 20 minutes until creamy and the pasta is al dente.
- Add toasted black pepper.
- Cut smoked provola into strips.
- Turn off the heat and add the provola, mixing well.
- Finish with grated zest of an unwaxed lemon.
