Summer Pasta with Smoked Salmon Tartare and Vegetables

A fresh, no-cook pasta salad (except for the pasta and green beans) perfect for summer. Smoked salmon tartare meets crunchy vegetables marinated in olive oil and lemon, topped with zucchini flowers.

Ingredients

- 150 gTartare di Salmone AffumicatoCodanera brand recommended by chef
- 70 gGreen Beans
- 1 pcsZucchini
- 1/2 pcsRed Onion
- 3 pcsZucchini Flowers
- Olive Oilto taste
- White Wine Vinegarfor soaking onion
- Lemon Juiceto taste
- Saltto taste
- Pepperto taste
Method
- Blanch the green beans in boiling salted water for 2-3 minutes until tender-crisp. Drain and cool.
- Cut the green beans diagonally into small pieces.
- Finely dice the red onion and soak in a mixture of cold water and white vinegar for a few minutes. Drain.
- Dice the zucchini into small cubes (remove the white core if desired).
- In a large bowl, combine the diced zucchini, drained red onion, olive oil, salt, pepper, and lemon juice. Mix well.
- Clean the zucchini flowers: remove the small green parts and the pistil. Tear into pieces.
- Cook the spaghetti in boiling salted water until al dente. Drain and cool under cold water.
- Add the cooked pasta and the green beans to the bowl with the marinated zucchini. Toss gently.
- Add the smoked salmon tartare and toss gently to combine.
- Serve immediately, topped with zucchini flowers and extra diced red onion.
