Neapolitan Pasta and Peas

A classic Neapolitan pasta and peas dish with crispy pancetta and a creamy pea sauce.

Ingredients
10 items- Pancettacut into cubes
- Extra Virgin Olive Oilfor sautéing and finishing
- Onionchopped
- 250 gPeasfresh or frozen
- Vegetable Brothhot, as needed
- 400 gShort Pastaspaghetti broken into pieces or short pasta
- Crosta di Parmigianopiece of rind
- Black Pepperfreshly ground
- Grated Cheese(optional) — pecorino or parmesan, to taste
- Salt(optional) — to taste
Method
- Cut the pancetta into cubes.
- Brown the pancetta in a drizzle of extra virgin olive oil.
- Remove the crispy pancetta from the pan.
- Chop some onion and sauté it in the same pot with the pancetta fat.
- Add the peas and cover with vegetable broth.
- Bring to a boil and cook the peas until tender.
- Break the spaghetti (or use short pasta) into pieces.
- Take half of the cooked peas and blend them with a little broth to make a cream.
- Add the pasta to the pot with the peas and gradually add hot broth.
- Cut a piece of parmesan rind and add freshly ground black pepper.
- When the pasta is half-cooked, add the pea cream, parmesan rinds, and pepper.
- Continue cooking, adding more broth if needed.
- Finally, add the crispy pancetta and a drizzle of raw extra virgin olive oil.
- Serve with grated pecorino or parmesan cheese to taste.
