A creamy pasta dish with fresh and frozen peas, cooked in a pea broth and finished with pecorino, lemon zest, mint, and basil.

Method

  1. Finely chop a fresh onion and sauté it in a pot until softened.
  2. Add both frozen and fresh peas to the pot and sauté briefly.
  3. Add water and cook for 5 minutes.
  4. Remove the pea pods, rinse them, and add them to the water to create a pea broth.
  5. Add the fresh peas to the broth.
  6. Add ditalini pasta to the pot and cook, adding the pea broth as needed when the pasta dries out.
  7. Grate pecorino romano cheese.
  8. Grate lemon zest over the pasta.
  9. Add fresh mint and basil, stirring gently.
  10. Turn off the heat, then add black pepper, a drizzle of olive oil, and pecorino cheese.
  11. Serve and enjoy.
