Pasta, Potatoes and Onions

My interpretation of pasta and potatoes, enriched with onions and smoked scamorza for a creamy and flavorful result.

Ingredients
11 items- Extra Virgin Olive Oilto taste
- 1 pcsGarlicwith or without skin
- 3 pcsOnionsabout 250-300g total
- 3 pcsPotatoesabout 700-800g total
- 1 tbspTomato Paste
- Vegetable Brothor water
- Saltto taste
- 160 gPastamezze maniche or other short pasta
- 230 gSmoked Scamorza
- 50 gParmigiano
- Pepperto taste
Method
- Place a drizzle of oil in a casserole and turn on the heat.
- Add a clove of garlic (peeled or unpeeled) to flavor the oil.
- Add the onions cut into pieces about half a centimeter, and a little vegetable broth (or water). Cover and cook for about 10 minutes.
- Meanwhile, peel and cut the potatoes into pieces not too small, place them in water to prevent browning.
- After 10 minutes, the onions are soft and the liquid is absorbed. Add the potatoes and a tablespoon of tomato concentrate. Mix.
- Cover with vegetable broth (or water) and add a pinch of salt. Cover and cook for about 10 minutes until the potatoes are tender.
- Add the pasta (mezze maniche or other pasta) and cook for about 7 minutes (if the pasta cooks in 11 minutes, cook only 7 minutes then turn off the heat).
- Turn off the heat, cover, and let it rest for 5-6 minutes.
- Cut the smoked scamorza into small cubes.
- Stir in the smoked scamorza cubes and parmesan cheese, mixing vigorously like a risotto.
- Serve with freshly ground black pepper to taste.
