A classic Neapolitan pasta and potato dish with smoked provola cheese, pancetta, and a creamy sauce.

Ingredients

- 800 gPotatoespeeled and cut
- 150 gPancettadiced
- 150 gSmoked Provola(optional) — smoked, diced or sliced
- 2 lVegetable Brothvegetable broth
- Celeryto taste
- Onionto taste
- Carrotto taste
- Extra Virgin Olive Oilextra virgin olive oil
- Tomato Pastetomato paste
- Basilfresh basil
- Saltsalt
- Pepperpepper
Method
- Prepare a vegetable broth.
- Peel potatoes and cut them into small, uniform pieces. Soak them in cold water to prevent browning.
- Finely chop celery, onion, and carrot.
- In a large pan, heat olive oil and fry the pancetta until crispy. Remove and set aside.
- In the same pan, sauté the chopped vegetables (soffritto) until softened.
- Add half of the potatoes and a spoonful of tomato paste. Cover with vegetable broth and cook until the potatoes are tender.
- Blend the mixture with an immersion blender until creamy.
- Add the remaining potatoes and continue cooking for 10–15 minutes.
- Add the pasta, stirring occasionally. Add hot broth as needed to keep the consistency.
- When pasta is cooked, stir in the crispy pancetta, fresh basil, and provola (if using). Serve immediately.
