A rustic layered pasta and potato casserole from Cosenza, Calabria. Layers of pasta, sliced potatoes, tomato sauce, cheeses, and oregano, baked until golden and crispy.

Method

  1. Heat olive oil in a pan with a clove of garlic, a whole chili pepper, and a few basil leaves. Once the oil is warm (first bubbles around the garlic), add tomato sauce and a pinch of salt. Cook for 5-6 minutes without reducing too much.
  2. Slice potatoes into thin rounds (2-3 mm thick) and keep them in water to prevent browning. Slice the red onion finely.
  3. Begin assembling in a baking dish: spread a thin layer of tomato sauce on the bottom. Add a layer of broken pasta (candele or penne lisce). Top with a layer of potato slices. Sprinkle with oregano, a pinch of salt, some pecorino cheese, some caciocavallo cheese, and a little raw onion. Repeat the layers (sauce, pasta, potatoes, seasonings) until all ingredients are used, ending with a layer of potatoes.
  4. Pour water along the side of the dish until it reaches just below the top potato layer.
  5. Sprinkle the top with oregano, pecorino, caciocavallo, breadcrumbs, and a very light drizzle of olive oil.
  6. Cover the dish and bake in a static oven at 190°C (375°F) for about 40 minutes. Then remove the cover and continue baking for another 20 minutes, until the top is crispy and golden.
  7. Let the dish rest for a few minutes before slicing and serving.
