A traditional Italian pasta and chickpeas soup, creamy and comforting.

Ingredients
9 items- Extra Virgin Olive OilGenerous amount
- Pancetta(optional) — Optional, a small piece for extra flavor
- Garlic2-3 cloves, crushed
- Chili Pepper1 dried chili, or to taste
- ParsleyA bunch for the base, plus extra fresh leaves for garnish
- 3 pcsPrecooked Chickpeas3 jars of canned chickpeas, drained
- Vegetable BrothEnough to cover the chickpeas
- SaltTo taste
- 400 gMixed PastaShort pasta, preferably mixed shapes ('pasta mista')
Method
- In a pan, heat a generous amount of olive oil. Add pancetta (if using) and sauté gently.
- Add crushed garlic, chili pepper, and a bunch of parsley. Sauté over low heat until fragrant.
- Add the canned chickpeas and stir.
- Cover with vegetable broth, bring to a boil, then lower heat and simmer for 15 minutes.
- Remove the garlic (and parsley stems, if desired) from the pan.
- Use an immersion blender to partially blend the soup, leaving some whole chickpeas for texture.
- Season with salt.
- Add the pasta (preferably mixed short pasta) and cook in the soup, stirring occasionally, until al dente. Add more broth or water if needed.
- Stir in a handful of fresh parsley, torn by hand.
- Drizzle with extra virgin olive oil.
- Let it rest for 3-4 minutes before serving.
