A perfect summer dish: fresh borlotti beans and mussels in a light, flavorful pasta. Simple and economical, bursting with the seaside aroma and creamy beans.

Ingredients
8 items- 700 gWhole MusselsFresh mussels, cleaned
- 200 gFresh Borlotti Beans Already CleanedPre-shelled fresh borlotti beans, or 1 kg of beans in pods
- ParsleyTo taste, a sprig
- Chili PepperFresh or dried chili, to taste
- 1 pcsGarlic1 clove, plus extra for cooking beans
- Extra Virgin Olive OilExtra virgin olive oil, for cooking and finishing
- OnionA small onion, chopped
- PastaShort pasta shape, such as ditalini or spaghetti (break into pieces)
Method
- Clean the mussels: remove the beard and scrub each mussel against another under running water to remove impurities.
- If using fresh borlotti beans in pods, shell them.
- Boil the shelled beans in salted water with a clove of garlic for 20 minutes. Reserve the cooking water.
- In a large pan, heat olive oil with a garlic clove (in its skin) and a sprig of parsley. Add the cleaned mussels, cover, and cook over high heat until they open.
- Remove the mussels from the pan, collecting the cooking liquid. Set both aside.
- In the same wok, add more olive oil, chopped onion, garlic, and chili pepper. Sauté gently without browning.
- Add the cooked beans and a ladle of the bean cooking water. Let it simmer for about 5 minutes to blend flavours.
- Add the pasta (a short shape) and cook until al dente, adding more bean water if needed.
- Return the mussels to the pan, stir gently to warm through.
- Finish with a drizzle of extra virgin olive oil, serve warm or at room temperature.
