Ingredients
12 items- 200 gHam ShankThickly diced, similar to guanciale
- 300 gHokkaido PumpkinDiced into small cubes, skin on if baked
- 100 gChestnutsHalved
- 50 gButter
- SageFresh leaves
- RosemaryFresh sprig
- Black PepperTo taste, freshly ground
- Spring Onion(optional) — Sliced, optional
- 400 gTrenne PastaOr other short pasta
- 50 gParmesan CheeseGrated
- WaterFor cooking pasta and a drop for the sauce
- SaltFor pasta water
Method
- Dice the ham shank into thick pieces, similar to guanciale.
- In a pan, melt butter and add sage and rosemary to perfume the oil.
- Add the diced ham shank and cook until rendered and crispy.
- Dice the Hokkaido pumpkin into small cubes (skin on if baked).
- Add the pumpkin cubes to the pan and cook until they start to soften and melt slightly.
- Add a drop of water and season with black pepper.
- Halve the chestnuts and add them to the pan.
- Optionally, add sliced spring onion.
- Cook the trenne pasta in salted boiling water until al dente.
- When the pumpkin mixture is ready, turn off the heat.
- Drain the pasta and add it to the pan with the pumpkin and ham.
- Add grated Parmesan cheese and a generous grating of black pepper.
- Toss everything together until well combined and creamy.
- Serve immediately, garnished with sage leaves.
