A quick and flavorful pasta dish with canned tuna, eggplant, bell peppers, cherry tomatoes, and Castelvetrano olives, inspired by Sicilian caponata.

- Canned Tunapreferably whole tuna cooked in water and salt
- Basil

Method
- Cut the eggplant into small cubes, season with salt, and let rest to release bitterness.
- Cut the cherry tomatoes into quarters or halves.
- Cut the bell pepper into thin strips and then into small dice.
- Cut the onion into rings.
- Cut the garlic clove in half.
- Fry the eggplant in hot extra virgin olive oil until golden, then drain.
- In a pan, heat oil and sauté the garlic and onion.
- Add the diced bell pepper and cook.
- Cook the pasta in boiling salted water.
- Add the cherry tomatoes to the pan with the vegetables.
- Add the Castelvetrano olives.
- Add the canned tuna (drained) and turn off the heat.
- Drain the pasta al dente and add it to the pan.
- Add torn basil leaves and mix well off the heat.
- Serve immediately.
