Pasta with Pork Ragù, 'Nduja and Onions

A rich and flavourful pasta dish inspired by Calabrian cuisine, featuring a slow-cooked ragù of pork (capocollo, pancetta, sausage) with spicy 'nduja, sweet onions, and provolone cheese.

Ingredients

- Chili Pepper(optional) — Sliced with seeds, adjust to taste
- Pork CapocolloCut into small cubes
- Pork SausageCrumbled
- PancettaCut into cubes
- White WineFor deglazing
- Onions(optional) — Sliced, ratio roughly equal to meat
- Tomato Paste(optional) — Or 2-3 tablespoons passata
- 'Nduja di SpilingaRoughly chopped
- SaltTo taste, but careful with salty meats
- Pasta (Mezze Maniche)Or other short pasta
- Provolone PiccanteSpicy provolone, some in pan and some grated on top
Method
- Heat oil in a casserole over heat.
- Add sliced garlic and sliced chili (with seeds) and sauté briefly.
- Cut pork capocollo into small cubes.
- Add crumbled sausage meat and capocollo cubes to the pan.
- Add pancetta cubes and brown all the meat well until the liquids have evaporated.
- Deglaze with wine and let it evaporate completely.
- Slice the onions.
- Dissolve tomato concentrate in a little water (or use 2-3 tablespoons of passata) and add to the pan.
- Roughly chop 'nduja and add it.
- Add the sliced onions (the ratio of meat to onions is roughly 1:1, adjust to taste).
- Season with a little salt – be careful because the cured meats are salty.
- Reduce heat to minimum, cover partially, and cook for about an hour, adding a splash of water if it becomes too dry.
- Cook pasta (mezze maniche) in boiling salted water until al dente.
- Transfer some of the sauce to a pan.
- Drain the pasta slightly early and finish cooking it in the pan with the sauce.
- Add spicy provolone cheese: a little in the pan and some grated fresh over the plate.
- Serve immediately.
