Pasta with Pistachio Pesto and Salmon

A super quick pasta dish featuring a creamy pistachio pesto and fresh salmon, ready in just a few minutes. Perfect for an effortless yet impressive meal.

Ingredients
10 items- Pistacchi sgusciatinatural (unsalted) pistachios
- Parmigiano Reggiano
- 1 pcsGarlic(optional) — one clove; omit if not liked
- Basil
- Olive Oilextra virgin, the better the oil the better the pesto
- Icea few ice cubes to help emulsify
- Saltto taste
- Tagliolini Freschifresh tagliolini, cook 1–2 minutes
- Salmonsmoked or fresh, torn into pieces
- Chopped Pistachios(optional) — for garnish
Method
- Make the pistachio pesto: In a bowl, combine shelled pistachios, grated Parmigiano Reggiano, a garlic clove, basil leaves, olive oil, and a few ice cubes. Blend with an immersion blender until smooth and creamy. Adjust salt and add more oil if needed. Set aside.
- Bring a pot of salted water to a boil. Cook fresh tagliolini for 1–2 minutes until al dente.
- Just before draining, add a small ladle of pasta cooking water to the pesto to loosen it.
- Drain the pasta and toss with the pistachio pesto.
- Tear the salmon into small pieces and add to the pasta at the last moment. Mix gently to combine.
- Serve immediately, optionally topping with extra salmon pieces and a sprinkle of crushed pistachios.
