Pasta with Puntarelle

A classic Roman pasta dish featuring puntarelle, a type of chicory, with a double preparation: some cooked in a soffritto of anchovies and garlic, and some served raw with a tangy anchovy vinaigrette. This is the chef's personal favorite pasta recipe.

Ingredients

- Spaghettior linguine or short pasta
- Green Chili Peppergreen chili pepper; used in soffritto and for garnish

- Apple Cider Vinegarapple cider vinegar
- Extra Virgin Olive Oilextra virgin olive oil; for soffritto and raw sauce
- Saltfor pasta water; not needed in sauce due to anchovies
Method
- Prepare the soffritto: in a pan, add extra virgin olive oil, crushed garlic, anchovies, and green chili pepper. Let the anchovies melt.
- Clean the puntarelle: separate the tender leaves from the stems. The hollow (soft) stems will be cooked, the hard stems will be eaten raw. Cut the hard stems into thin strips using a special tool (or a vegetable peeler) and soak them in ice water to curl.
- Add the leaves and the soft puntarelle to the soffritto and wilt them. Meanwhile, cook the spaghetti in salted boiling water.
- When the anchovies are melted, add a ladle of pasta cooking water. Continue cooking.
- Prepare the raw sauce for the puntarelle: in a bowl, mix crushed garlic, anchovies, extra virgin olive oil, and apple cider vinegar. Emulsify.
- Drain the pasta al dente and transfer it to the pan with the cooked puntarelle. Remove the garlic and toss with a knob of butter. Add more cooking water if needed.
- Drain the raw puntarelle and dress them with the raw sauce. Plate: layer the pasta with cooked puntarelle, then top with the dressed raw puntarelle, and garnish with chopped green chili pepper.
