Pasta with Endive, Guanciale and Scamorza

Pasta with endive, braised and crispy guanciale, scamorza cheese and anchovies.

Ingredients
9 items- GuancialeUse a good quality guanciale. Some will be used for the base, some reserved crispy.
- Extra Virgin Olive OilExtra virgin olive oil, generous amount.
- AnchoviesUse anchovies from Cantabria if possible.
- Chili PepperOne dried chili pepper, or to taste.
- EndiveAlso known as scarola or endive. Use one head.
- Coarse SaltA pinch of coarse salt.
- Vegetable BrothAbout one ladleful.
- BusiateA Sicilian pasta shape. You can substitute with another long pasta.
- ScamorzaSemi-aged scamorza, cut into small cubes.
Method
- Cut the guanciale into strips (or small cubes if preferred).
- In a large pan, pour a generous amount of extra virgin olive oil.
- Add the guanciale and cook gently until lightly rendered but not fully crispy; reserve some for final garnish.
- Add a few anchovies (preferably from Cantabria) and a chili pepper.
- Lay the endive (indivia/scarola) on top of the guanciale without stirring.
- Add a pinch of coarse salt and another drizzle of oil.
- Pour in a ladleful of vegetable broth.
- Cover with a lid and cook over very low heat for about 10 minutes, until the endive is tender.
- Meanwhile, cook the pasta (busiate) in boiling salted water until al dente.
- When the endive is done, lift it out and drain off any excess liquid; keep the pan for assembly.
- Drain the pasta and add it to the pan with the endive.
- Turn off the heat and add the scamorza cut into small cubes. Toss until the cheese melts and coats the pasta.
- Plate the pasta and top with the reserved crispy guanciale pieces.
