A traditional coastal recipe from Campania: pasta flavored with sea pebbles coated in algae, which impart an intense seafood taste without using any fish or shellfish. A true 'poor dish' born from creativity.

Method

  1. Rinse the cherry tomatoes in seawater to lightly salt them.
  2. In a large pan, heat a drizzle of extra virgin olive oil with a clove of garlic.
  3. Add the cherry tomatoes and the sea stones (pebbles with a thin coating of algae).
  4. Sauté for a few minutes, then add a splash of natural water and a couple of tablespoons of seawater.
  5. Add the spaghettini directly to the pan and cook 'risottato' style, stirring frequently and adding more water (seawater or natural) as needed until the pasta is al dente.
  6. Remove the garlic clove and transfer the pasta to plates, making sure to leave the stones behind (they are not edible).
  7. Serve immediately.
