A traditional coastal recipe from Campania: pasta flavored with sea pebbles coated in algae, which impart an intense seafood taste without using any fish or shellfish. A true 'poor dish' born from creativity.

Ingredients
7 items- SpaghettiniAny thin spaghetti works
- 2 pcsCherry TomatoesRinsed in seawater
- 1 pcsGarlicOne clove
- Extra Virgin Olive OilA drizzle
- Sassi di MarePebbles with a thin layer of algae, collected from the seashore
- 2 tbspAcqua di MareUsed to add saltiness; can be substituted with salted water
- Acqua NaturaleA little, for cooking
Method
- Rinse the cherry tomatoes in seawater to lightly salt them.
- In a large pan, heat a drizzle of extra virgin olive oil with a clove of garlic.
- Add the cherry tomatoes and the sea stones (pebbles with a thin coating of algae).
- Sauté for a few minutes, then add a splash of natural water and a couple of tablespoons of seawater.
- Add the spaghettini directly to the pan and cook 'risottato' style, stirring frequently and adding more water (seawater or natural) as needed until the pasta is al dente.
- Remove the garlic clove and transfer the pasta to plates, making sure to leave the stones behind (they are not edible).
- Serve immediately.
