Ingredients
10 items- Spaghetti di Gragnano IGPUse spaghetti number 3 or similar
- 200 gGamberi viola (gamberi freschi)Fresh shrimp with long antennae; about 100-200g per person
- Cabras BottargaMullet bottarga from Cabras, Sardinia
- 2 pcsGarlicOne clove for the shrimp stock, one for the final sauce
- ParsleyFresh parsley, chopped
- Chili PepperFresh or dried chili pepper, to taste
- LemonJuice of half a lemon
- Prosecco (Conegliano Valdobbiadene)Chilled prosecco for deglazing
- Extra Virgin Olive OilUse a good quality olive oil, preferably from Liguria or Sardinia
- SaltFor pasta water
Method
- Prepare the shrimp: remove heads and shells, peel the tails. Set aside heads and shells.
- In a pan, crush the heads and shells with olive oil and a clove of garlic. Sauté over medium heat.
- Deglaze with chilled prosecco and let the alcohol evaporate. Strain the stock through a sieve.
- Bring a pot of salted water to a boil. Cook the spaghetti al dente.
- In another pan, heat olive oil with a crushed garlic clove. Add chopped chili pepper.
- Add the shrimp stock to the pan. Add the drained pasta and a splash of pasta water.
- Toss the pasta, adding the peeled shrimp. Cook until shrimp are pink.
- Slice the bottarga thinly or grate it.
- Serve the pasta with bottarga, fresh chopped parsley, and a squeeze of lemon.
