Pasta with Onions, Tuna and Olives

A simple and flavorful pasta dish where sweet caramelized onions, tuna, and olives come together. The bay leaves infuse the onions with extra aroma, and the pasta catches all the flavors in its grooves.

Method

  1. Slice the onions (about one medium onion per person).
  2. Heat olive oil in a pan over medium heat, add bay leaves.
  3. Once the oil is warm, add the sliced onions and a pinch of salt. Stir, then reduce heat to low.
  4. Cover and let the onions steam until soft and translucent (about 10–15 minutes).
  5. Meanwhile, bring a pot of salted water to a boil and cook the pasta (e.g., fusilli bucati) according to package directions.
  6. Once the onions are soft, reduce heat to minimum and add the drained tuna. Stir gently and keep warm.
  7. Drain the pasta, reserving a little pasta water, and add the pasta to the pan with the onion-tuna mixture.
  8. Add a splash of pasta water if needed to loosen, then toss well to combine.
  9. Remove bay leaves, plate the pasta, and garnish with a few olives. Serve immediately.
