Pasta with Bottarga

A simple yet elegant Roman and Sardinian-inspired pasta dish featuring spaghetti with bottarga (cured fish roe), cherry tomatoes, anchovies, garlic, chili, and lemon. The bottarga is used both grated into the sauce and shaved on top for a double dose of briny flavor.

Method

  1. Heat olive oil in a pan over medium heat. Add 2 cloves of garlic and cook until golden.
  2. Add the halved cherry tomatoes and cook for 1–2 minutes, without letting them break down completely.
  3. Add sliced chili, anchovies, and a tiny pinch of salt. Stir.
  4. Add a portion of the bottarga (grated or finely chopped) and let it wilt slightly in the pan.
  5. Add a few parsley stems and a splash of water (not pasta water) to create a light sauce. Cook briefly.
  6. Remove the garlic cloves and parsley stems from the pan.
  7. Meanwhile, cook the spaghetti in boiling salted water until al dente.
  8. Drain the pasta and transfer to the pan. Add a ladle of pasta cooking water and toss vigorously over heat to emulsify.
  9. Turn off the heat. Add the remaining grated bottarga, chopped parsley, and a squeeze of lemon. Toss well.
  10. Serve immediately, topping with shaved bottarga and extra parsley. Optionally add a few basil leaves.
