Pasta Cinque Buchi (five-hole pasta) is a traditional pasta shape from Catania, Sicily. This recipe is a rich meat sauce, typically made during Carnival, with pancetta, beef, sausages, and pork rind slow-cooked for hours. The pasta is finished in the sauce and served with pecorino cheese.

Ingredients

- Sausagespierced with a fork, kept whole with casing
- Pork Rindpork rind, cut into 3 pieces

- Tomato Pastetomato paste

- Saltto taste
- Pasta Cinque Buchifive-hole pasta; can substitute with other pasta shapes
- Pecorinograted, for serving
Method
- Heat olive oil in a large pot and sauté chopped onion, celery, and carrot until golden.
- Meanwhile, cut fresh pancetta and beef into large chunks. Leave sausages whole but prick them with a fork. Cut pork rind into three pieces.
- Add pancetta and beef to the pot and brown well on all sides.
- Deglaze with red wine.
- Add tomato paste and reduce the heat to low.
- Add crushed peeled tomatoes and stir.
- Add the pieces of pork rind.
- Simmer very gently for about 2 hours, then add the whole sausages.
- Continue cooking for another 1-2 hours, keeping the sauce moist (add a little water if needed). Season with salt to taste.
- Bring a pot of salted water to a boil and cook the pasta until al dente.
- Transfer the sauce to a large pan, including some meat and a piece of pork rind.
- Drain the pasta and add it to the pan with the sauce.
- Finish cooking the pasta in the sauce for a couple of minutes, adding a splash of pasta water if needed.
- Serve the pasta with grated pecorino cheese and place a sausage on the side.
