Grandma Divina's Pasta with Eggs and Cheese

A simple yet nostalgic pasta dish made with eggs, Parmesan cheese, and plenty of black pepper, cooked in parsley-infused water. This is the comfort food of chef Luca Pappagallo's childhood, passed down from his grandmother Divina.

Ingredients
6 items- ParsleyUsed to infuse the cooking water; not eaten directly.
- SpaghettiBroken into short pieces before cooking; short pasta can be substituted.
- EggOne egg per person; use more for a richer dish.
- Parmigiano ReggianoFinely grated; use plenty for a creamy texture.
- Black PepperFreshly ground, used both in the egg mixture and as a final garnish.
- SaltAdd less than usual because the Parmesan cheese is salty.
Method
- Remove the tough stems from the parsley and place the leaves and tender stems in cold water. Bring to a boil.
- Meanwhile, in a bowl, combine eggs (one per person), plenty of grated Parmesan cheese, and abundant black pepper. Beat well with a fork until smooth.
- Break the spaghetti into shorter pieces (about 4-5 cm long) using your hands, or use short pasta like tubetti.
- When the parsley water comes to a boil, add salt (less than usual because the cheese is salty) and add the broken spaghetti. Cook for 2-3 minutes less than the package instructions; if the package says 10 minutes, cook for a maximum of 7 minutes.
- Remove most of the cooking water, leaving the pasta slightly brothy (the water level should be about even with the pasta).
- Add the egg and cheese mixture to the hot pasta. Stir vigorously over the heat for about 1 minute until the eggs thicken and coat the pasta.
- Turn off the heat, cover the pot, and let the pasta rest for 3-4 minutes.
- Serve with an extra grind of black pepper on top. Enjoy immediately.
