A traditional Roman pasta dish made with garlic, chili, basil, pecorino and parmigiano cheese, finished with a creamy parmigiano fonduta. Chef Ruben's personal twist.

Ingredients

- Parmigiano Reggianofor fonduta
- Creamfor fonduta
- Spaghettoas needed
Method
- Finely chop the garlic and chili.
- Heat olive oil in a pan and add the garlic, chili, and a bit of basil. Season with salt.
- Cook the sauce for 10 minutes.
- Prepare the parmigiano fonduta: mix cream (panna) with grated parmigiano cheese until smooth.
- Bring a pot of salted water to a boil and cook the spaghetti until al dente.
- Off the heat, add the pecorino cheese to the pasta and stir well.
- Serve the pasta with the fonduta and extra basil if desired.
