A traditional Roman pasta dish made with garlic, chili, basil, pecorino and parmigiano cheese, finished with a creamy parmigiano fonduta. Chef Ruben's personal twist.

Method

  1. Finely chop the garlic and chili.
  2. Heat olive oil in a pan and add the garlic, chili, and a bit of basil. Season with salt.
  3. Cook the sauce for 10 minutes.
  4. Prepare the parmigiano fonduta: mix cream (panna) with grated parmigiano cheese until smooth.
  5. Bring a pot of salted water to a boil and cook the spaghetti until al dente.
  6. Off the heat, add the pecorino cheese to the pasta and stir well.
  7. Serve the pasta with the fonduta and extra basil if desired.
