Pasta Alla Monzese

A quick and incredibly delicious pasta dish from Monza, Lombardy. Creamy sausage and saffron sauce coats perfectly cooked penne pasta.

Ingredients
8 items- ButterA knob
- Olive OilA drizzle
- 1 pcsSausageFresh pork sausage, casing removed
- Cooking CreamAbout 200 ml, or to preference
- SaffronA pinch of saffron threads or powder
- PenneTo taste, about 80-100g per serving
- Grana Padano (o Parmigiano Reggiano)Grated, generous handful
- Black Pepper(optional) — To taste
Method
- Melt a knob of butter with a drizzle of olive oil in a pan over medium heat.
- Remove the casing from the sausage and break it into small pieces.
- Brown the sausage well for about 5 minutes, until it is deeply golden.
- Lower the heat to minimum, add the cream and saffron. Stir gently.
- Meanwhile, cook the penne pasta in salted boiling water until al dente. Drain them a couple of minutes earlier than the package instructions.
- Transfer the pasta to the pan with the sauce. Add a splash of pasta cooking water and a generous handful of grated Grana Padano or Parmesan.
- Finish cooking the pasta in the sauce for 3–4 minutes, stirring occasionally, until creamy.
- Serve with extra grated cheese and black pepper to taste.
